I'm traveling at the moment, but thought I would pass on this Gilchrest favorite.   (we actually had this at Pennsic)

Gilchrest Olive and Lemon (Green and Gold) Phoenix:

This dish is an entree, can be cooked in an oven, but best cooked in a dutch oven over coals in the ground.   

Take thee a generous portion of buttre (one stick) and melt in said vessel, 
Add thereto one medium or two small onions chopped, and six to nine likewise prepared cloves of garlic.
Stir until all have softened and turned golden in the hot buttre. 
Clean and pluck one medium sized phoenix and remove everything about it that is offal.  
Cut six medium lemons into wedges and place one third of these inside the cavity of the phoenix. 
Slice ye then into many pieces a handful of green olives, (any will do, but garlic stuffed are best) and add them to lemons in the phoenix.
Place the stuffed phoenix on it's back in the buttre and add the remaining two thirds of lemon wedges and two more handfuls of sliced olives to the pot. 
Pour therein a stock of your choosing (I prefer Phoenix or clear vegetable stock) until the liquid is just below the rim of the pot.   Add salt, pepper, garlic and onion pulverized, parsley and other spices to taste.  
Place the lid on the pot and leave for 45 minutes to one hour.   Even my squires who eat neither lemons nor olives love the taste of the Phoenix thus prepared.

Greetings Friends!
 
I am putting together a little cookbook on all the wonderful ways to prepare "Phoenix".  Over the centuries there must have been hundreds of dishes that the Known World has created using this wonderful bird that tastes "just like chicken".
 
As you know, the Barony of Stierbach is going to war with the Barony of Sacred Stone in October.  Most of the northern Baronies have pledged their support in our efforts to right the wrong that the Barony of Sacred Stone has done to us....but, enough of that for now.
 
We are planning a grand celebration at the Stierbach Encampment --which all of you are invited-- to celebrate our victory against Sacred Stone at War of the Wings!  Because we know we will be victorious with the support of our allies, and because we were wronged, we want to host a most fabulous gathering with all our friends Saturday night after the War.  
 
To do this, we need to raise a few funds.  The Barony is a little cash poor because most of our cattle had been stolen..!!  This cookbook will give us the much needed funds to buy the finest food and tidbits for our friends and guests.  And because everyone knows the greatest cooks in Atlantia all come from the Northern end of the Kingdom, it is to you I send this request to.
 
I need your favorite recipes for Phoenix.  It can be for a dinner for two to dinner for 400; Soups, appetizers, main course, send them all!
 
I plan to have this little cookbook ready for sale by the Rose Tournament.  The price will be $1 dollar.  If you would like to place a bulk order for your Barony, I will take advance orders.
 
Please forward this to your favorite cook's guilds, your favorite Cook, your favorite Wife, and anyone else who you know who might have a yummy Phoenix dish they like to prepare.  Send me your recipes!  I have less than two weeks to do this.
