We would be less likely to attend on Sundays.

When there is an event on Saturday, this is the only day we have left to fix
the house for the upcoming week.  It's also the only day that we can lounge
around and not have to worry about getting out.  Finally, most of the time,
this is the only day left we have to sew or do our projects for events.

On weekdays, we're already about because we have to go to work.  However, I
do agree that we need to get more of the populace to attend meetings, so if
moving the meeting on Sundays would make this goal a reality, then I'd say
go ahead.
I would suggest that we'd do it on a trial basis (three to six months) and
see if more people actually do show up.  If it ends up not making any
differences, then we may want to revert to our usual night.
